This recipe is a simple vegan dish for beginners. It involves very simple ingredients that are a perfect combination for this delicious Zucchini dish. You can always add some protein if you would like. I like to make this dish as is to get the most out of the noodles and the Avocado sauce.

How to turn the zucchini into noodle form?

This is what makes this recipe so fun to make. I love using my spiralizer any chance I can get. Simply insert the zucchini into the spiralizer and then you have the base to your dish. Set the noodles to the side as you prepare the rest of the dish. This is just one fun way that you can add zucchini to a dish.

Do Zucchini Noodles Taste Like Pasta?

The first question most people ask is do zucchini noodles taste like pasta? The answer is no. That does not mean they do not taste good. I think they are amazing. When you add the right ingredients to go with the zucchini noodles you can make them taste very similar. They do carry a strong flavor as does pasta.

Are Zucchini Noodles Healthier Than Pasta?

Zucchini Noodles are in fact healthier than pasta. There is around 14g of carbs in a individual serving of pasta. There are only 6g of carbs in an average size zucchini. Which breaks down to around 3-4g of carbs per portion. So in fact they are much healthier for you than pasta is.

 

How to make the Avocado Sauce?

There are many different techniques to make an avocado sauce. When making the sauce with zucchini noodles and serving as a substitute for pasta you want something that would be overbearing in the dish. I throughly enjoy the tase of the zucchini noodles so this was the perfect mixture of ingredients for the sauce to pair well with the noodles. Mix the avocado, garlic clove, lemon juice, dijon mustard, olive oil, salt, and pepper into your food processor. Blend until the sauce is in a cream form and set to the side.

Putting the Entire Dish Together!

Now that you have made your Zucchini Noodles and have you Avocado Sauce. It is time to craft the dish together and enjoy. Some people like to put the sauce right on top. I like to toss my sauce with my noodles. I will toss them in a small bowl. Then put on a plate and add your tomatoes and and protein you desire.

What Are Some Vegan Alternatives to Pasta aside from Zucchini Noodles?

There are many different alternatives to pasta that are vegan. You can quite frankly take any vegetable or potato and put it in a spiralizer and boom you have noodles. I like to use zucchini noodles because the process of making them is very fun. There are boxes at the store that you can buy of pre made noodle substitutes. Below are just some of the alternatives you could use. There are many more, but these are my favorite.

You can do just that. I like mixing it up and adding protein at times. There are many different options you can use for protein if you are looking to add some to this dish. Without adding protein it is a very low protein dish. On days I have this as a meal I make sure to have my protein shake as well as some snacks throughout the day to keep up on that. Below are some proteins you could add to this dish.

Vegan Zucchini Noodles with Avocado Sauce

Enjoy this delicious Zucchini Noodles with Avocado Sauce Recipe. Add some cherry tomatoes to make these even better. This is a vegan friendly option.
Servings: 2 People

Ingredients

  • 1 zucchini peeled into stripes
  • 1 ripe avocado
  • salt and pepper to taste
  • ½ teaspoon Dijon mustard
  • 1 garlic clove minced
  • juice of ½ lemon
  • 3 tablespoons olive oil
  • cherry tomatoes for decoration
  • chopped parsley for garnish

Instructions

  • Place the zucchini stripes in a large bowl.
  • In a food processor or mini chopper add the avocado, salt and pepper to taste, minced garlic clove, juice of a lemon, Dijon mustard and olive oil.
  • Blitz until creamy and delicious and pour it over the zucchini stripes.
  • Mix until combined and serve in a serving plate.
  • Garnish with cherry tomatoes and freshly chopped parsley.
