Vegan Tofu Bell Pepper Salad

  • ½ cup Tofu cut into small cubes
  • ½ cup Rocket Leaves
  • ½ cup Lettuce
  • 2 Cucumbers cubed
  • ½ Yellow Bell Pepper chopped
  • ½ Red Bell Pepper chopped
  • 1 pinch sea salt
  • Cayenne pepper to taste
  • ½ tsp Mixed Herbs
  • 1 tbsp Coconut Cider Vinegar
  • 1 tsp Sesame Oil
  • 1 tbsp Orange Juice
  • 1 tsp Thyme minced


  • In a glass container, add the orange juice, thyme, coconut cider vinegar, mixed herbs, salt and cayenne pepper. Shake well and set aside for now.
  • In a pan add the sesame oil and fry the tofu cubes with a little salt and cayenne pepper for 3 minutes.
  • In a salad bowl, combine the bell peppers, cucumbers, lettuce, rocket and tofu.
  • Add the dressing and serve.
