You can make this chocolate coffee cake every day with many optional additions (berries, coconut, vegan marshmallows). This batter is quite versatile. You can use it for loafs, or thinner version for cake pancake, add nuts or fruits (fresh or dried) for muffins!

So I use the same kind of batter for making Easy Vegan Coffee Cake. It comes together very easily and quickly.

Top it with simple cinnamon or use any other spices if you wish. The Coffee Cake recipe below is sweet enough to be considered as a bakery version but it is not too sweet. To serve it for events, just add a usual icing and be sure that everyone will ask you to share the recipe.

Vegan Coffee Cake Recipe

Ingredients for batter:

  • 1 cup soy or almond milk
  • 1 tsp vinegar
  • 1 tablespoon applesauce or non-dairy yogurt
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup neutral oil or 3 tablespoons applesauce to cook without oil
  • a few optional drops of almond extract
  • 2 tsp baking powder
  • 1.5 to 1.75 cups of flour
  • 0.5 tsp salt
  • 0.25 tsp baking soda

Ingredients for streusel:

  • 0.5 cup flour
  • 1/3 to 0.5 tsp salt
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  • 1.5 to 2 tablespoon refined coconut oil
  • 1 tablespoon vegan butter or oil

Step-by-Step Instructions:

  1. Line a 7-inch non-toxic pan with parchment hanging on the edges. Preheat the oven to 350 deg F.
  2. Mix in the wet ingredients with the help of Vitamix blender or Blender Food Processor until the sugar has fully vanished.
  3. Mix 1.5 cup flour, baking soda, baking powder, and salt in another container.
  4. Optional – add spices if you like, berries, candied ginger, or pineapple if you wish. You may also put two tablespoon almond flour for additional texture.
  5. Fold the dry mixture into the wet until it gets a smooth texture. Add more flour if needed.
  6. Pour the batter into a parchment lined pan.
  7. Add the dry streusel ingredient and mix well one more time.
  8. Add the vegan butter and oil and mix it in with fingers until well distributed. Spread over the batter.
  9. Bake at 350 degrees F for 35 to 45 minutes. If you wanna make standard sized muffins bake for 22 to 24 minutes. Cool then for 10 minutes, then remove from the pan.
  10. Wait for it to get cool before cutting.

Store it for up to two days, refrigerated for up to a week, frozen (cut) for up to a 30 days.

Recipe Notes

  • Gluten-free variation: Mix 3/4 cup rice flour, 1.25 cup almond flour, 1/3 cup potato starch, and a tablespoon chia seeds. Use 1.75 cup of this mix and add more if needed. Use a mix of rice and almond flour for streusel.
  • Use 0.25 cup nut butter for the streusel, Also use 0.25 cup brown sugar and add few tsp maple syrup if needed to cook a crumbly mixture.
  • Add seasonal berries, nuts or dried fruit.
  • Mix in softened peanut butter into the batter.
  • Optional Icing: Mix 1/3 cup sugar powder with a tsp of almond milk. You also can use just a syrup dressing (3 tablespoon sugar and a tablespoon water)

Vegan Coffee Cake With Kahlua Frosting

As you may see, Coffee Cake is often a simple cake. It doesn’t necessarily have any coffee in it in fact. In America, people often name something a coffee cake when it comes with a streusel or other toppings that are usually served in coffee shops or with coffee. You can make this cake even without oil and gluten. At the same time in the UK (or Russia, where I’m from), a coffee cake is a cake containing coffee inside.

The vegan coffee cake recipe below has some coffee in it and I think its coffee flavor in it is just incredible!

The Coffee Flavour

There are 2 kinds of coffee you can use for this cake: filter coffee and instant coffee powder. The thing is that the taste of filter coffee flavor doesn’t come through strongly enough. That’s why this coffee cake includes 3 tbsp of instant coffee powder, and the flavor is exactly what you need. Moreover, this way is very easy, you don’t even need to put on a pot of coffee, you just have to spoon it in.

The Frosting and Decoration

This Kahlua frosting is a great pairing with the taste of the vegan coffee cake. And then decorate it with melted chocolate drizzled everywhere and chocolate chips sprinkled on top. This way you will get a perfect look and amazing taste. Serve it with a cup of coffee and enjoy! Everyone will fall in love with this vegan coffee cake, with kahlua frosting!

Ingredients for the Cake:

  • 250g flour
  • 1 tsp baking soda
  • 200g brown sugar
  • 0.5 tsp salt
  • 3 tablespoon instant coffee powder
  • 0.5 tsp cinnamon
  • 2 tablespoon hot water
  • 2 tsp vanilla extract
  • 240ml soy or almond milk
  • 80ml canola oil
  • 1 flax egg
  • 1 tablespoon apple cider vinegar

Ingredients for the Frosting:

  • 480g powdered sugar
  • 60ml kahlua
  • 56g vegan butter
  • 1 tablespoon instant coffee powder
  • 1 tsp vanilla extract
  • 1–2 tablespoon soy or almond milk

Step-by-Step Instructions:

  • Preheat your oven to 350°F.
  • Mix the flour, sugar, salt, baking soda, and cinnamon.
  • Prepare the flax egg – mix a tablespoon of ground flaxseed with three tablespoons of hot boiled water. Waitt for 1 minute and let it become gloopy.
  • Mix the instant coffee with 2 tablespoons of hot boiled water into a paste. Add the soy milk and put it to the mixing bowl with the vanilla, apple cider vinegar, oil, and flax egg.
  • Whisk with a hand till smooth but don’t overmix.
  • Spray 2 7 inch cake tins with non-stick spray and cover each a piece of parchment paper.
  • Divide the batter into 2 even parts between the 2 tins.
  • Put into the oven and bake for a half of an hour or until a toothpick inserted into the center of the cake comes out clean.
  • Let the cakes get cool before frosting.
  • Prepare your frosting – mix the powdered sugar, Kahlua and vegan butter with the help of a food processor. Mix the coffee powder with vanilla and 1 tablespoon soy milk into a paste. Start mixing it all at low speed, gradually increasing until it’s smooth. Add the extra tablespoon of soy milk if needed.
  • Frost the cakes when they are cooled and decorate with melted chocolate drizzle and chocolate chips.

Notes

  • Always weigh to flour in order not to fail batter
  • Use any vegetable oil (canola oil and extra virgin olive oil also work fine). But if you wanna use coconut oil, wait till it melts.

Ingredients for the Cake:

  • a cup soy or almond milk + 1 tablespoon apple cider vinegar
  • 0.75 cup sugar
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp baking soda
  • 0.5 cup vegan sour cream
  • 0.5 tablespoon vanilla extract
  • 0.5 cup canola oil

Ingredients for Drizzle:

  • a few teaspoons nondairy milk
  • 0.75 cup powdered sugar

Ingredients for Cinnamon Streusel Topping:

  • 0.5 cup flour
  • a tablespoon cinnamon
  • a cup of brown sugar
  • 0.25 cup vegan butter, cold

Step-by-Step Instructions:

  1. Preheat the oven to 350°F.
  2. Mix vinegar and the milk and set aside to curdle.
  3. Whisk the flour, baking powder, sugar, soda, and salt.
  4. Add the sour cream, vanilla, oil, and milk to the flour mixture and mix it with the help of a blender until fully combined.
  5. In a separate bowl, add the ingredients for the topping and combine everything with the fork.
  6. Take a 9×12 cake pan and spread about a half of the batter on the bottom of the pan and pour half of the topping
  7. Spread the second part of the batter and sprinkle the rest of the topping.
  8. Bake for 25-35 minutes, until a toothpick comes out with crumbs or clean.
  9. Mix the ingredients for the drizzle.
  10. Once the cake cools, drizzle the powdered sugar mixture over the cake, slice, and serve!

Vegan Coffee Cake with Prunes

Ingredients:

  • Natural coffee – 250 ml
  • Prunes (pitted) – 100 g
  • Walnuts – 100 g
  • Honey – 2 tablespoon.
  • Sugar – 100 g
  • Baking soda – 1 tsp.
  • Salt to taste
  • Flour – 250 g

Step-by-Step Instructions:

  • Boil strong coffee and strain it.
  • Add honey and sugar until fully dissolved.
  • Wash prunes and chop them.
  • Chop the nuts with a knife.
  • Put nuts and prunes in a bowl. Add soda and a pinch of salt.
  • Mix in the flour.
  • Pour coffee and mix everything well.
  • The dough should have a thick cream consistency (you may add a little more flour than 250 g)
  • Grease the form with vegetable oil and sprinkle with flour.
  •  Pour the dough into the form and bake for about 40-45 minutes at 180 * C. Readiness to check with a toothpick.

The cooled cake can be poured with dark chocolate, melted in a water bath, or powdered with powdered sugar.
